These banana oatmeal muffins are a delicious and nutritious little snack. The best part is that they don’t contain any flour or added sugars and are still very yummy! A goal of mine is to completely eliminate wheat for not only myself but for my family as a whole. The reason behind this is not due to any fad diet or because I heard this and that (although, I wish it was) unfortunately instead my littlest one was diagnosed with a wheat allergy. My poor little girl had it rough for quite a few months before she was diagnosed.
When I was first told about my daughters wheat allergy I didn’t really think much of it because at this point I just wanted to know what was wrong with my girl after being constantly told that it was just “a virus”, I mean I was so frustrated and the fact that I actually knew gave me such a huge relief. However little did I know that wheat was in pretty much everything I was giving to my daughter — poor little girl no wonder she was constantly sick!
So my first task was to head to the grocery store and find new healthier alternatives. In short, that is how I ended up coming up with this blender muffin recipe. My daughter loves muffins but I refuse to give her anything that I know will cause her any type of pain or discomfort. Instead, I experimented with a couple of different recipes made some tweaks and came up with my own.
The first time I made these my kids and even my hubby devoured them that same day! They are on the denser side but are nice and moist. Definitely, kid-approved and also a very easy and fast recipe you can put together in just 5 minutes — looking out for my busy mama’s. Seriously, you literally just toss everything in a blender (except for chocolate chips), pour into a muffin tin, and bake! how easy is that? Make them in large batches, freeze them, and eat them on the go! They make a great addition to breakfast or snack on the go!

Banana Oatmeal Blender Muffins
These banana oatmeal blender muffins are easy, healthy, and delicious. You literally toss everything in the blender, pour, and bake! Healthy yummy muffins in just 20 mins.
- 1 Cup Greek Yogurt
- 2 cup Rolled Oats Gluten-free
- 2 Eggs
- 2 Bananas
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 tsp Vanilla extract
- 2 tbsp Stevia
- 1/2 cup Chocolate Chips Mini, regular, shaved
1. Preheat oven to 400F and prepare muffin pan.
2. Combine all ingredients in a blender (except for chocolate chips) and blend until smooth.
3. Stir in the chocolate chips.
4. Pour batter into muffin pan, fill 3/4 of the way full ~ about 3Tbsp.
5. Bake for 15-20 minutes just until set. Insert a toothpick in the center until it comes out clean.
